How to Choose the Best Chestnuts

Shiny Shell

Look for a glossy, mahogany-colored shell. A dull surface can suggest the nut is past its prime.

Firm to Touch

Give it a gentle squeeze. High-quality chestnuts feel heavy for their size and firm, without gaps between the shell and the nut.

Check for Freshness

Fresh chestnuts should have no black spots or mold. They are a perishable fruit, so look for a clean, healthy appearance.

Keep 'Em Fresh

Chestnuts are fresh produce, not nuts!

  • Refrigerate Immediately: Store in a perforated plastic bag in the crisper drawer. Fresh chestnuts like high humidity but need to breathe.
  • Prevent Mold: If you see surface moisture, towel dry them and replace the bag.
  • Curing: Leave them at room temperature for 2-3 days before cooking to convert starches to sugars for a sweeter taste.

Preparation Guide

Classic Roasting

The traditional way to enjoy chestnuts. Cut an 'X' into the flat side of each nut to let steam escape. Roast in a 400°F oven for 15-20 minutes until the shells curl back and the meat inside is tender and golden.

Simple Boiling

Perfect for using chestnuts in recipes or if you prefer a softer texture. Score the shells, then simmer in a pot of water for about 15 minutes. Once slightly cooled, the shells and skins will peel away easily, leaving soft, nutty fruit.
